Preheat oven to 325F. Line two baking sheets with parchment or silicone baking mats.
In large bowl add oats, spices, salt and brown sugar and mix well.
Microwave coconut oil for 30-45 seconds until completely liquid and add to dry mixture.
Add honey to dry mixture and mixture thoroughly.
Pour 1/3 of the mixture onto each baking sheet and spread in an even layer and place in over for 15 minutes.
Stir and sprinkled 1/3 of the almonds and cashews on each tray. Put trays back in the oven with the tray that was on the top rack now on the bottom and vice versa. Bake another 10 min.
Remove the trays from the oven and let cool for 20 min, then add the chopped ginger.
