Roasted Sweet Potato Veggie Protein Bowl

Ingredients
  

  • 1 medium sweet potato
  • 2 cups fresh spinach
  • 2 large eggs
  • 1 avocado
  • 1 tsp everything but the leftovers seasoning (or your favorite seasoning)
  • 1 tbsp avocado oil
  • salt & pepper to taste

Instructions
 

  • Preheat Oven to 425F.
  • Peel sweet potato. Cut into 1" inch cubes and place on parchment lined baking sheet. Drizzle with avocado oil and toss. Sprinkle with everything but the leftovers seasoning and toss. Bake for 20 min, stirring once during cooking.
  • Rinse spinach and pat dry. Coarsely chop spinach. Over medium heat, add a drizzle of oil to a medium frying pan. Add spinach and sauté for 2-3 min, move to one side of the pan.
  • Add a little more oil to the pan. Crack two eggs into the pan and fry until cooked till your liking.
  • Add roasted sweet potatoes to bowl, top with spinach and eggs.
  • Cut avocado in half. Cube avocado and scoop out with spoon and add to bowl. Sprinkle with salt and pepper and enjoy!
